Did you ever eat a chocolate covered potato chip? I tried one today, and it was delicious. Daytona has a historic district, and one of the shops is Angell & Phelps Chocolate Factory. We took a tour, and I learned a few things.
1. Cacao trees are also called Theo Bromo, food of the gods. They grow best in the tropics, 20 degrees north or south of the equator.
2. Candy making is a very precise art. All ingredients are weighed very carefully and heated to exact temperatures. Caramel at 242 degrees is used to make honeybees, their version of Turtles, which is trademarked.
3. Chocolate is cooked in copper pots and cooled on marble tables. Angell & Phelps have been using the same pots and tables since 1925.
4. Chocolates keeps best at 67 degrees and 55% humidity.
5. Nonpareils means without parallel in French.
6. Chocolate has anti-oxidents – it’s a health food.
Something I already knew: Chocolate makes any day a little better.
