One of the best things about crockpot cooking is the way your house smells so good all day long. Today I made this recipe for beef stew.
Stayabed Stew
2 lbs beef stew meat, 1cup little tiny peas, 1 cup sliced carrots, 2 chopped onions, 1 tsp. salt, a dash of pepper, 1 can tomato or cream of celery or cream of mushroom soup, diluted with 1/2 can of water, 1 big raw potato sliced, bay leaf.
Mix ingredients and put in casserole dish with tight lid and bake in 275 degree oven for 5 hours or in crock pot on low for 10-12 hours.
The interesting thing is that my friend Kay gave me this recipe over 30 years ago, a few years before she moved away. I’ve made it every winter since then and adapted it over the years to suit my family. We like more potatoes and NO peas. Kay and I have kept in touch sporadically over the years, and just a few months ago, we hooked up on facebook. Recently I sent her a message that I was still using her recipe.
